seems the borer bees get them...are there any rose varieties that the borer bees don't like?

You can try Rose Double Knockout.

I'm not aware of any specific species of roses that borer bees don't like but you should be able to deal with them with an insecticide (maybe Sevin) and planting natural repellants around your roses like marigolds, pennyroyal, eucalyptus, ect. You could also try a combo insecticide and fungicide w/ fertilizer to deal with any aphids or plack spot and rust you might have. You might also want to look around and see if you can find the nest and deal with it. That should also cut down on the borer bees available to hurt your roses.
