in the first season, Jesse's last name was initially Cochran, reportedly because one of the producers was a fan of singer Joe Cocker. His name was changed after season one, when he came to be called Jesse Katsopolis. The name change was due to John Stamos wanting the Jesse character to better reflect his Greek heritage. No reason is given for the character's name change, but fans tend to believe it could have been a stage name, especially because the name "Cochran" also disappeared from his band's name after the first season.

I agree with the stage name idea. In a flashback with Danny and Joey meeting for the first time, "Pal Joey, young Jesses is seen chasing, then being chased BY, a bunch of girls. Jesse was caught my Ms. Borland, and she called him by his Greek last name. He appeared to be 5 or 6 at the time. My guess is that he went with `Cochran' during junior high / high school.
Perhaps... and I'm spit-balling here... between the season 1 and 2 break, Jesse went to see his grandparents `Papouli' and Gina in Greece. Jesse DID mention that his twin-like cousin Stavros treated him like a brother when he visited ("Kissing Cousins"). My guess is that when Jesse returned home, he discarded `Cochran' in favor of honoring his family.

They do that in a lot of shows. The name doesn't sit well with focus groups so they change it. In the first episode David was in on Roseanne his name was Kevin. Why they changed it who knows. That is something I notice about TV shows a lot. They also change stages a lot because it doesn't sit well with focus groups. Look at the transformation the Banks residence went through on The Fresh Prince of Bel Air. There is usually not an explanation for any of it.

It was only used in one or two eps. as Cochran, later changed for multiple eps. to Katsapolis. I don't think any reason was ever given, since chances are no one remembered it having ever been stated as Cochran.
The stagename explanation was only among fans who caught the change, as it makes sense that an aspiring star in any field might adopt a less ethnic name, Kirk Douglas is a prime example in reality. his real name is so ethnic and uncommon any attempt I make to post it would be an insult.

originally his name was jesse cockran, but in season 2 it got changed to consopolis,so it could be closer to jesse's greek culture and heritage.
