I'd say one (though very minor) purpose was that Gatsby was trying to become one of (or at least friends with) the "in-people" - the rich, socially prominent movers and shakers.
The irony is that although many came to those parties, the ones that Gatsby was hoping to impress instead regarded him as a "nouveau riche", a boorish upstart who could never be accepted by "their sort."

But the main reason he threw those elaborate parties was in the hope of attracting his long-lost love, Daisy, to one of them.
