I think you'd need a timber merchant.. who stocks flexible plywood in 8 X 4 sheets and then you would need to buy some sticky back vinyl or fablon type product in your design choice (tongue and groove etc.). This can be purchased at most DIY stores or probably in bulk rolls online somewhere.
I would put the covering onto the flxible ply before cutting it to the shapes and sizes required or at least after I have cut shapes but before I attached the ply to walls of caravan.. sounds like a fun project..

You could use 4mm ply, make it 'look' tongue & groove by setting a circular saw to cut 1 mm deep, then run grooves across. Suggest you guide the saw by means of clamping a batten to the board. cut....move batten....cut etc.

The thinnest sheet ply you can buy is 6mm. B&Q Warehouse do 8 by 4 sheet for about £10. Don't know of any tongue & groove product that thin either, 10mm is about the thinnest T&G boards i know of.

4mm is too thin ..look in yellow pages under sheet material supplier
