I am working on a picture in Adobe Photoshop. And, i want to change a text, how do i select the text and change it to whatever i want it to say there.

Well Open your PhotoShop then >>> File >>> New >>>> Ok>>>> etc.

Well Now you need to Import a text to your job on photoshop, Right ?
1- All you have to do is to click on the Type Tool to your Left in the tools box ...!

2- Go to Window On Top of Photoshop then then Check on Character or Paragraph ...! :) then you will have a small box with full options to change the text to whatever you want to then you will be able to control your text Size , Directions , Text Type to make it bold , Italic , Bold & intalic , Regular ....etc :D and there you will also have the paragraph options so try them it will help you to align your text too. ;)

There are Two options ....

if the text you want to change or edit is already a text layer, then you can it with the text tool.. its simple..

if the text you have to change is in the form of an image then, you have to first clean the text with the help of the stamp clone tool. Then you add the text you want in a new layer using the text tool.

Well if you already typed in a text, simply click on it and you can edit it. If you want to add a whole new text use the text button on the left (the picture looks like a T) and just click on your image and it will create a text layer and you can type.
