She knew that stealing the money from the Goverment even though it was to save her boyfriend would be a severe chargable offense treason. Prison for a very long time she also felt guilty for what she did not only stealing the money but also betraying Bond.
Remember this is supposed to be first Bond film so they also have to make Bond a bit bitter towards women and up to this point he was a bit of a wuss! We can't have Bond as a wuss can we?

Because Vesper felt so guilty about knicking Bond's dosh and because the film needed a tragic ending in the style of "On Her Majesty's Secret Service."

Plus, as the next film is a continuation, Bond would have to be faithful to Vesper if she'd lived and he couldn't do his usual bed-hopping with international beauties.

Well because this movie is supposed to be right back at the beginning of all the james bond movies, if vesper lived then the next movie wouldn't fit correctly

It wasn't that. It was because she betrayed the British Government in transferring the money from the game into the terrorists bank account instead of the Treasury's. Although this was because of a kidnapping involving her family, she would have been jailed by the British.

lt's guilt for betraying her loved one and the government.
ln Bond movies, the girls always "disappear".
Always a new one in every movie.

I watched this last night, I have no idea why she did it, Perhaps it was a guilty conscience and she felt that she deserved to die!
