Later ,they were to become, the body guards of today . taking care of celebrities .

Dictionary.com says that the derivation of "henchman" is "Middle English hengsman, henshman, servant to a person of rank : hengest, horse (from Old English) + man, man; see man." So "hench" is a corruption of an older word for "horse," which is, indeed, a creature that serves man.

A 'hench' or 'henchman was/is a protector. Hence this name is always given to people who accompany others in a protection role.
These days they are called 'Private security personnel'.

I take it you mean as used in " henchman " as hench is not used alone. It means a trusted or obedient attendant or follower, who carries out orders unquestioningly .
