My favorite is to dice them add sour cream, salt and black pepper. yum

simple cucumber sandwiches are yummy. just mayo on sandwich bread with slices of cucumber, and then a little salt and pepper.

then there is raita.... shred half a cucumber, then with the other half, use the little tiny grater that will make the cucumber like mush, but also bring out the juice of the cucumber. Keep it all, including the juice (this is for a cucumber that is about 5 inches long) in a large bowl. Add 2 cups of yoghurt (low fat is ok too). Then chop about 4-5 mint leaves and also a TBS or so of cilantro (also called coriander) and add to the yoghurt cucumber mix. Then add salt and freshly ground black pepper (freshly ground is the best) to taste.

raita is an Indian side dish you eat with biryani rice or curries, but I use it for non-indian dishes too. it cools your mouth if you eat spicy foods. I sometimes just mix it with white rice when I am lazy to cook.

I know u don't want a salad... but this one is simple and good. just have a the same amount of diced cucumbers and tomatoes. Then add some chopped onion. and you can also add soem chopped cilantro. add some olive oil, a few squeezes of fresh lemon juice, salt, and pepper. cover and leave in the fridge from at least one hour for the flavors to combine. its very good.

Cucumber Salsa

Sweet and spicy. yum.
1 cup sour cream
1 cup yogurt, plain
1/4 cup parsley, cnipped
1/4 cup cilantro, fresh,snipped
1 teaspoon cumin
1/2 teaspoon salt
2 cucumbers, medium,peeled,seeded and coursely shredded.


Mix all ingredients.
Cover and refrigerate until chilled, about 2 hours Dip: 2large cucumbers, unpeeled
1/2 cup vinegar
2 teaspoons salt
1/2 teaspoon garlic salt
2 (8 ounce) cream cheese
3/4 cup mayonnaise


Wash and grate unpeeled cucumbers.
Use a grater with 1/2-inch holes.
Add vinegar and salt; cover and allow to sit overnight in refrigerator.
Next day, press out liquid.
Blend garlic salt, cheese, and mayonnaise.
Combine with cucumbers.
Serve with fresh veggies

Deep Fried Cucumbers
Deep fried cucumbers, or use zucchini or yellow squash.

INGREDIENTS:
4 cucumbers, peeled and thinly sliced
salt and pepper
2 eggs, well beaten
1 cup fine dry bread crumbs
1/4 cup bacon drippings

PREPARATION:
Season cucumbers with salt and pepper. Dip slices first in egg and then in bread crumbs. Fry in hot bacon drippings. Brown on both sides, drain, and serve hot.
6 to 8 servings.

cucumber salad my way: 1st peel and DE-seed a good amount of cucumbers like maybe 10, Then shred them, Squeeze out excess moisture, Put it in a bowl (no lid) Then sprinkle with sea salt, Let set overnight in the fridge. The next day squeeze out excess moisture again (salt draws it out) Put back in a bowl, Then mix approx 1/4 cup mayo,2-3Tbsp cranberry horseradish sauce,1Tbsp sugar or equivalent, mix with cucumber, enjoy.....My Grandmother created this recipe
But it was I who added cranberry horseradish sauce, Adds a nice twangy kick,, I could eat this every day. mmm mmm mmm.......

you can make lots of with cucumbers....like sandwich spread....grate the cucumbers(squeeze out its juice,you can use this juice as a skin toner its really good),and some carrots(grated,boiled and mashed eggs,cooked shredded chicken, add enough mayonnaise to make it a spread if too thick add some milk to it...add salt and black pepper according to taste...spread on bread slices or buns.....you can also add grated cucumbers(squeeze out the juice)to yogurt and add salt and pepper........make a salad dressing crushed 4 cloves garlic,add 2tsp vinegar,add 2tsp sugar(you add a little bit more if you want),salt and black pepper according to taste and a pinch oregano.....and olive oil 1 tbsp(or salad oil).......pour it over chopped...cucumbers,cabbage,carrots,bell pepper adn some chickpeas...add a pich salt to it...salad done!.....

buy some pea and ham soup then chop the cucumber into little pieces then add it to it .
