Got a good keer recipe you could share if you have the time? thanks in advance! happy eating!

Ingredients

1/2 cup Short or medium grain rice
8 cups Milk
4 Cardamom pods
1 1/4 cups Sugar
2 tablespoons Slivered blanched almonds
1/4 teaspoon Ground cardamom
1/4 teaspoon Freshly grated nutmeg
1 tablespoon Rose water or a few drops rose essence



Directions

1. Wash the rice and boil for 5 minutes in water. Drain well.

2. Bring milk to the boil with the cardamoms in a large saucepan, add rice and simmer, stirring occasionally for 1 hour or until rice is very soft and milk quite thick.

3. As milk thickens it will be necessary to stir frequently with a wooden spoon, scraping thickened milk from bottom and sides of pan.

4. Add sugar and almonds and continue cooking until the consistency is like that of porridge.

5. Remove from heat and pick out the cardamom pods.

6. If you think the flavor needs intensifying, add ground cardamom.

7. When half cool, stir in the rose water.

8. Serve warm or chilled, in a large bowl or individual sweet dishes.

9. Sprinkle the top with a little grated nutmeg.

It is not recipe that makes a kheer good, it is the cooking experience. Just try this :
1.Take a small quantity of ghee, warm it and spread it so that the floor and walls of the container is covered. (This is to keep the kheer getting burnt)
2. Pour the milk in the container. Boil the milk and then continue simmering, till it is thick and pinkish.
3 . Put your scented rice (abt 60-70 gms. for 1 litre of milk).
4. Continue stirring till the rice is well-cooked.
5. Put sugar. (dont put sugar before the rice is cooked), cashew or any other dry fruits of your choice.
6. Wait for 5 mins. And it is ready.
