it's very simple...
eat a lot of green leafy vegetables which are great source of iron and then eat citrus fruits which helps absorb iron and increase hemoglobin content

I read this before on mayo clinics website.
Unfortunately I am too lazy to go look it up right now.
There are alot of dietary resources listed to replace meat.
Peanut butter was one food.

you need to do a combination of fruits and veggies.. that make a complete protein..

like.. beans and rice....
