Two favorites.

The Mojito which is made with light rum (1 1/2 shots), lime juice, sugar (2 tsp plus more for rimming glass), club soda and fresh mint. Run a wedge of lime around the rim of a Tom Collins glass, then coat the edge with granular sugar by dipping it in sugar. Squeeze about a tablespoon of lime juice into the glass. Add some sugar and mull the mint leaves (3-4 leaves) in the sugar mixture. Add ice, rum and finish off with club soda. Stir and enjoy (often garnished with another whole mint leaf or two and a cutting of sugarcane).

The other is a Pineapple Upside Down Cake Martini which is made with vanilla vodka, pineapple rum, amaretto and butterscotch schnapps. Mix the ingredients in a shaker filled with ice and strain into a martini glass. Be careful! It goes down smooth but it's all alcohol, no mixers so it packs a wallop! I don't usually measure these ingredients when I make them but I'd say it's about 2 shots of the vanilla rum, 1 shot of pineapple rum, 1/2 shot each of the amaretto and the butterscotch schnapps. It's better than any other PUDC martini I've ever tried!

I don't usually like mixed drinks. When I'm at a bar I usually order a shot of bourbon and a draft of whatever is on tap that I like, and a glass of water on the side.

If I'm in the mood to have a mixed drink I will have a martini, shaken not stirred:

* Gin
* Vermouth (in a squirt bottle)
* Shaker with ice
* Garnish (with me it's a lemon peel twist but others use olives, those little onions, or whatever)

Open the shaker, squirt vermouth onto the ice, pour in a good sized double shot of gin, shake that sucker up, pour into a highball or cocktail glass, garnish, DRINK. Mmmmm..... icy cold gin...

Long Island Iced Tea: Equal parts of Vodka, Gin, Rum, Tequila and Triple Sec, with a splash of cola.

This is a great drink because it has a lot of alcohol and only a SPLASH of mixer.

Another great one is Long Beach, which is the same as above, however using cranberry juice instead of cola.

In Puerto Vallarta, Mexico there is this place called the Burro they make the absolute most wonderful margaritas on the rocks that I have ever had. Margaritas on the rocks are my favorite.
Tequila
Triple Sec
Sweet and Sour
Roses Lime Juice
Squeeze of fresh lime
This is how I make them but I don't know how they make the magical ones at the Burro

Or Classic Cesar
Over ice, shot of vodka, dash Tabasco, dash or two Worcestershire, good dash of lemon juice, s & p to taste, clamato juice.

Orange Crush: Take a tall glass, fill it half-full with light beer. Then fill the other half with orange juice. Finally, drop in a shot of amaretto- delicious!
