I currently have 2 cattle from my small farm instead of sell the beef as a whole I would like to have it butchered custom for me, any information on what to expect fee, and how to use everything.

they actually have butchers that will come to your farm and cut if for you , my uncle has a farm in kansas and they did it for him cost him about 400

I have found that the amish butcher is cheeper then the local butcher by allmost .10 a pound so if theres a amish butcher close to you that may be a option... You should expect to spend between .30-.40 cents a pound, no more then .50 cents a pound and around $30-40.00 for the kill and gutting fee. Diffrent areas have diffrent prices but I don't think they differ much. As far as using everything, I take it you mean the head, hoofs and inards? You can eat the tounge(said to be very tender), give the hoofs to your dogs (if you have any) and the inards you can boil and feed to your dogs or cats (again if you have any) or eat yourself. just keep in mind if you want these things back you MUST request it to the butcher apon droping the cows off and filling out the butcher form. other words they will only give you back the cuts of meat you want and they discard or resell the rest.

I sell about 15 beef a year. I use a place with a USDA inspector present. it cost 45 cents a pound hanging plus 30 dollar kill charge for each one. also will charge 5 cents more a pound to spilt a whole. extra for patties and some cuts.
Places that don't have a full time USDA inspector often charge less.

it depends on whewre you are located and wetheryou take the beef to them or they come to you also the size of the beef and what cuts of meat you would like
