I work very long hours, usually between 9-18 hours/day......I don't really have a specified "lunch time" and kind of have to eat on the go........we have a microwave and a refrigerator at work that i can use.

Any ideas on any healthy meals I can take to work, possibly even make the night before and reheat?

Thanks :)

I take a lot of premade snacks....like fruit, carrots, cucumber slices and such for snacking. As for a lunch or dinner there are some great ideas.

You can make your own burritos with fat free beans and salsa.

Grilled shrimp skewers on brown rice

Pita bread filled with grilled chicken/pork, hummus, cucumber, lettuce and tomatoes

Thick hearty vegetable soup (though it's getting warm now)

Healthy meals is fruits and veggies. That does not take much time or effort to make. Just wash and toss them in a bowl. Do 50 - 50 ratio. Since you work a long hr, you may need to do this every 4 hrs or so, or go hungry quickly. Try Meal replacement drink by Shaklee company. They are clinically tested, proven, and guaranteed. Try to eat at least five small meals each day. Between breakfast, lunch, and dinner, supplement with all kninds of fruit and healthy nuts (almonds, walnuts, cashews, etc.). These small snacks count as meals. Small portions, provided they're healthy, help maintain energy levels throughout the day. Also drink plenty of purified water throughout the day - at least two liters per day. And focus on balancing your meals between carbs, protein, and healthy fats (avocados, nuts, etc.). They're are plenty of resources on the web that will provide examples of a healthy diet.
