When preparing a pork roast, l usually stud the meat with small pieces of garlic, prepare the rind by scoring, oiling then rubbing a generous amount of salt into it. The salt and oil will seep down into the meat, mix with the garlic and natural flavour of the pork, and you have yourself one damn tasty roast.

I have an amazing recipe full of flavor that I use when entertaining.
Bread a boneless pork chop (thin pref) with flour and fry in a small amount of oil. (Smothering the pork chop). Set aside and use the same pan you cooked the pork chops in. There should not be much oil left if any but the bottom should have left over pieces of crust and browned the bottom of the pan. (That is the good stuff). Add some butter and let it melt. Add pecans and honey to the pot and let it simmer. Once it makes a nice glaze dress it on your pork chops. I like to serve mine with Mash potatoes or cornbread stuffing on the side. I am including a link for you to get the acurate measurments.

Try the Ms. Dash seasoning blends, I use them on fish, and chicken, there are also different ones for pork, vegetables, etc.
Try the original blend it's has a yellow cap, also salt, pepper, garlic salt, don't overseason.

When I fry or bake pork chops, I usually season them with salt pepper, maybe some ground sage. After they are done I put a "little" horseradish on them.

Italian style, if it's a roast...roll it in a mixture of spices, such as rosemary pepper salt garlic sage caraway seed, then bake it in 350 oven, time depends on size. German style use salt and pepper but serve with stewed apple, raisin. A German style roast brown it then braise it in sauerkraut
