Well it's the oil/salt from your skin .. try this pour a beer with a big head ,, no pun , then wipe your finger across the side of your nose,, then dip into the foam and swirl,, it Will cause the foam to break down quicker,, Yet I think it kills the carbonation,,, makes it taste flat!

the salt on your skin reacts with the foam causing it to disipate quicker, of course if you poor the drink while holding the glass at an angle, you can avoid the foam pretty much altogether.

Your finger has salt on it from sweat or eating chips or popcorn or peanuts. That's what makes the foam go away.

actually if you wanna be even more crazy and have the foam go down faster-you wipe your finger somewhere where you're sweaty and it helps alot more than just a finger.
