Of the four choices you have presented, my vote will have to be for the Rock Cornish game hens. As Rachel Ray says, "yum"!
A Cornish hen for each person in your family leaves no lee-way for "fighting" over any piece of the bird. Everyone will have their own "bird in the hand".
Consider a "medieval feast". Develop your evening menu around anything that can be eaten without silverware, just like the meals in "Merry Old England". Serve wine or ale to the adults and grape juice to the youngsters, all served in wine glasses, of course. Have a bowl of water at each place setting to dip the greasy fingers in, and provide wash cloths to dry on.
An Italian background would be appropriate for spaghetti and meatballs. A "Godfather" theme maybe. If there is time for your children to help, they can make meatballs (use a melon scoop or ice cream scoop, depending upon the size of the meatballs), butter and garlic the French bread, construct a simple salad using a packaged salad mix, grape tomatoes, croutons, and a drizzle of EVOO.
Instead of making one big meatloaf, you could make little individual meatloaves in muffin tins.
Family meals do not have to be dreary, obligatory ordeals. Add some verve and spice. Don't forget breakfast! Life is a veritable smorgasbord!

Your family is lucky to have homecooked meals and they all sound yummy. I'd lean towards the meatloaf because that's a fave in my household and the leaftovers are easy to use in sandwiches! Other ideas may be: chicken stir fry or chow mein, or stuffed chicked thighs (we're having them tonight stuffed w/ ham and swiss cheese), lasagna (easier than spaghetti&meatballs?), or chili!

Lasginia. Its really quick and simple. Just make a simple mixture of sauce, meat and onion and put together some pasta (homemade is best) and cook it!

Barbequed short ribs with honey barbeque sauce and potato salad. Some snicker doodle cookies for dessert! Thats what I am making for my family.
