Japanese food is very healthy overall. If you eat sushi often, your cholesterol level may go up, since you are just eating protein and carbohydrates. Your cholesterol will definitely increase if you eat a lot of shellfish (especially shrimp).

When eating sushi, try to eat makizushi, which is wrapped in seaweed. At least that way you are getting some vitamins, minerals, and fiber.

As with any cuisine, you should avoid the deep-fried foods such as tempura, tonkatsu, chickenkatsu, or greasy items such as curry rice.

Japanese food offers a multitude of cholesterol-friendly items, though: any nabe dish(なべ), yuudoufu(湯豆腐), natto(納豆), boiled fish(煮魚), or salted fish such as salmon no shioyaki (サーモンの塩焼き).

Also try eating stuff such as hijiki, sudako(酢だこ), mozuku, or udon with mountain vegetables (山菜うどん).

Bon appetit!

Japanese tend to live to an old age and be thin and have low incidence of heart disease and cancer compared to Americans, so that should tell you something about their diet. Most sushi is good for you. Fish is very good for you. But avoid a lot of soy sauce (the sodium could raise your BP).

Japanese food is good and very healthy in general.
Just use your common sense and don't eat too much or the same thing every day.

Of sushi, shrimp, squid and egg are thought to raise cholesterol level, but sushi is not something we eat every day, so we don't worry to much about it.
