I work for a lady that is 87 years old she is polish and has not had a polish meal in about 2 years since she moved in with her son. I would love to cook something for her the only thing is it needs to be soft because she has dentures and can't chew very well. Does any one have a simple recipe that I could make?

**Polish Pancakes (for a breakfast or brunch)
3 eggs
6 tablespoons milk
1 teaspoon flour
1/4 teaspoon salt
1 teaspoon sugar
4 teaspoons butter
3/4 cup strawberry jam
2 cups frozen sliced peaches, thawed
confectioners' sugar

Beat eggs until foamy.
Add milk, flour, salt and sugar. Beat well.
Melt 1 teaspoon butter in a 9-inch skillet, tilting to cover entire bottom.
Pour 1/4 of egg mixture into hot skillet, covering the surface evenly. Cook until firm enough to roll. Slip pancake from skillet onto clean cloth. Spread with jam and peaches and roll up. Repeat process making 4 rolls. Sprinkle with confectioner’s sugar. Slice and serve warm.

**Polish Creamed Potatoes (side dish)
6 potatoes, boiled and sliced
2 cups cream-style cottage cheese
1/4 cup instant minced onion
1 teaspoon salt
1 cup sour cream
1 cup cheddar cheese, shredded, divided
Mix all ingredients together except 1/2 cup cheddar cheese.
Place in 1 1/2-quart casserole. Sprinkle top with remaining 1/2 cup cheddar cheese. Bake in 325° oven for 40 minutes.

**Polish Sausage & Sauerkraut Casserole (for lunch/dinner, goes well with the potatoe recipe)
4 lbs Polish sausage, fresh if possible
1/2 lb bacon
1 small yellow onion
2 (27 ounce) jars sauerkraut
1/2 cup brown sugar
3/4 cup water
Preheat oven to 325 dg. Bring sausage to boil and simmer 15 minutes Drain and set aside.
Cut bacon into small pieces. Begin browning, then add diced onion. Saute together until bacon is almost crisp. Drain mixture, reserving bacon grease.
Drain sauerkraut (do not rinse). Add kraut and brown sugar to bacon mixture. Mix in about 2 T bacon grease and water, then place in large casserole dish. Cut Polish sausage into 3" pieces and place on top of sauerkraut.
Cover and bake at 325 dg. for 1 hour 15 mins., checking sauerkrait mixture halfway through to add more water if sauerkraut appears very dry. Finish baking, then remove from oven. Taste sauerkraut and, if desired, adjust flavor by adding salt and pepper, or a little more brown sugar, vinegar or bacon grease to your taste

Babka (dessert)
1 cup butter, plus
1 tablespoon butter
1 1/4 cups sugar
4 eggs
3 teaspoons baking powder
1 1/2 cups flour
1/8 teaspoon salt
1/8 teaspoon vanilla extract or rum extract or almond extract or lemon extract
1/2 cup raisins
Preheat oven to 350°F.
Grease and flour a babka, bundt or angel food cake pan.
Cream butter and sugar together.
Combine flour and baking powder.
Resume beating while gradually the eggs alternating with the flour mixture.
Add salt, extract and raisins and mix well.
Place dough in prepared pan and bake 50-60 minutes (cooking time depends on the type of pan you use).
Remove from pan when cool and dust with confectioner's sugar or glaze with lucre.

There are some very very good frozen pierogi available in the stores. Serve with sour cream and some cucumber salad (maybe you could slice the cukes extra thin). Ask her what her favorite kind of pierogi are - there are different fillings.

You could look up a good bigos (hunter stew) recipe, it takes a while, but it's good. It's basically multi-meat flavored sauerkraut stew with mushrooms. Mmm!
