look for a "no bake" cheese cake. I love making these with my 7 year old sister. I don't have the recipe right now though.

My favorite is with Jiffy corn bread mix and peanut butter and jelly. Fix the mix according to package directions. Fill the muffin cup 1/4 full with mix, add in a scoop of peanut butter and jelly (I like to make peanut butter and jelly swirl with it first and it's a great one to hand over to the 6 year old) and then drop a teaspoon of the pb&j into the middle of the muffin mix. Top it off with cornbread mix to make the muffin cup 3/4 full and bake according to regular directions.

Look for the Klutz Kid's Cooking cookbook. It's fantastic. My dad and I used to use that book when I was really little, at least 18 years ago, and I've kept the book because it's so good, I want to use it with my own kids someday. They still sell new copies of it, plus it comes with easy to handle, brightly colored measuring spoons.
