Im following a bolognese recipe by Giada and it says to saute garlic and onion in olive oil over medium heat for 8 minutes, then add carrots and celery and sautee for 5 mins, then add ground beef and brown for 10 mins.

Wont the garlic burn?

Thats funny the reviews for the sauce are really good. Maybe Giada de laurentis made a typo?

I forgot to mention, it says to turn the heat to high when adding the ground beef!

Saute your onions first, then add the garlic in the end for just a minute or two. If you burn the garlic it will ruin the dish! As you add the other ingredients the moisture will come out and keep the garlic from burning! A lot of chefs put the garlic in early but I tend to add it toward the end for better flavor and to avoid burning it. All depends on the recipe for me!
I would think Giada meant 2-3 minutes and the publisher made an error! Giada is a Le Condon Bleu trained chef!

No, it shouldn't burn because you will be stirring the ingredients constantly. The garlic and the onions will caramalize nicely and impart a really great flavor into the food. Now, if you're really worried about the garlic burning then pull the garlic out before you add the vegetables and then add the garlic back in when the ground beef starts to brown. I feel that the garlic won't burn at all because it will only be in constant contact with the heat for the first 8 minutes - the rest of the time it will be mixed up in the ingredients. I saw this episode and had my doubts. If you sweat the garlic, it will be OK because you are not browning it. I say saute the onion, celery and carrots and then lower the heat and sweat the garlic. Then, brown the beef and go from there.

If you were cooking it alone for 23 minutes yes but the juices from the onion,oil,and ground beef keep it from burning. Plus it is on med not high.

Nope. As long as the moisture from the veggies is there, you'll be fine. I like to cook my onions first, though. The onions I get in the grocery store are crappy and tend to saute slower than my garlic.

No Because The Olive Oil Will Not Let it Burn
As Long as It is moister it Will not burn
High heat maybe

I would add the garlic at the end when you're browning the ground beef and it's almost done...then throw in the garlic.

It won't burn... the others ingredients being added, will expel liquid and this won't let the garlic burn

maybe with all the other ingredients added, it won't burn. i think if you cook it on its own in the oil for that long it will most likely get burnt,

the garlic will not only burn,but if not covered it will pop right out of the pan.
