SPAGHETTI BOLOGNESE

1 lb. ground round
1 (15 oz.) can whole tomatoes
1 (15 oz.) can tomato sauce
2 med. onions
5 garlic cloves
6 or 7 lg. mushrooms
1 green pepper
2 tsp. ready to use oregano
2 tsp. ready to use basil
1 bay leaf
1/2 tsp. dry thyme
Fresh ground pepper to taste
1/2 c. olive oil
1 lb. spaghetti
Parmesan cheese, grated
Extra virgin olive oil

Peel and chop onions, garlic cloves, mushrooms and green pepper. Put large skillet on burner and heat olive oil on medium high setting. Add onions, garlic, mushrooms, and green pepper. Fry for 5 minutes or until onions turn clear and garlic starts to smell strong. Pour all ingredients into a bowl and reserve for later.
Return skillet to heat and add ground beef. Fry until browned and break apart into small clumps. Returned fried vegetables to the skillet. Add whole tomatoes and chop them up. Add tomato sauce, oregano, basil, bay leaf, thyme and ground pepper. Mix ingredients well. Cover skillet and turn heat down to simmer. Simmer for 30 minutes.

Bring a large saucepan of salted water to the boil. Add spaghetti, a little at a time. Stir and add extra virgin olive oil to avoid sticking. Cook for 10 minutes or until just cooked through (no hard white center). Drain and run cool water through spaghetti. Transfer to a bowl and add a tablespoon of extra virgin olive oil and a half cup of grated Parmesan cheese. Mix well.

Remove sauce from stove and pour into a bowl. Spaghetti bolognese is now ready to serve.

Put a little olive oil in a frying pan. WHile it's heating chop an onion and throw that in. WHile it's softening, open the pound on mince, thrown that in. Stir it a bit to get brown. Find a tin of chopped plum tomotoes, open it and throw that in. Put in a good squeeze of tomato puree. Stir it up a bit more. When the meat is all brown leave it to simmer while the pasta cooks.

That's the basics.

I usually add some (dried) oregano and some basil, bay leaves if I have them, crumble up a beef stock cube, chuck in some Worcestershire Sauce, sometimes splash in some cider or wine if I feel like it and there's plenty of time for it to reduce..... oh and put in some frozen spinach cubes to make sure the kids get their ration of vegetables - they never notice!!

Try the following

Healthy spaghetti Bolognese
1 tbsp olive oil
200g/7oz lean steak mince
1 onion, finely chopped
4 large mushrooms, sliced
1 carrot, grated
1 400g/14oz tin tomatoes, chopped
230ml/8fl oz vegetable stock
2 tbsp tomato purée
½ tsp Worcestershire sauce
1 tsp freshly ground black pepper
300g/10½oz wholemeal spaghetti
2 tbsp chopped fresh parsley

Method
1. Heat the olive oil in a large saucepan over a medium heat. Add the mince and the onion and fry for five minutes, stirring occasionally, until the mince is browned and the onions softened.
2. Add mushrooms and carrot, cook for around one minute, then add tinned tomatoes, vegetable stock, tomato purée, Worcestershire sauce and freshly ground black pepper. Stir well and bring to the boil, then reduce the heat to simmer for 15-20 minutes, until the sauce has thickened.
3. Place the wholemeal spaghetti in a deep saucepan full of salted boiling water and cook according to packet instructions, then drain.
4. To serve, divide the cooked spaghetti between four dishes, spoon equal portions of Bolognese sauce over each and sprinkle with parsley

or Spaghetti bolognese

750g/1lb 10½oz mince
450g/1lb shop-bought spaghetti
3 tbsp olive oil
parmesan cheese, freshly grated

Method
1. Gently heat the mince in a large pan.
2. Place the spaghetti into a large saucepan of salted boiling water and cook according to the manufacturers' instructions.
3. Drain the pasta, toss with the olive oil, tip into a large serving bowl and top with the bolognese sauce. Serve with grated parmesan on the side

or Spaghetti Bolognese
200g/7oz spaghetti
1 tbsp olive oil
255g/9oz beef steak, diced
2 garlic cloves, peeled and crushed
½ red onion, peeled and sliced
400g/14oz tinned tomatoes
85ml/3fl oz red wine
dash Worcestershire sauce
dash Tabasco
½ beef stock cube, crumbled
2 tbsp fresh basil or flatleaf parsley, chopped

Method
1. Bring a large pan of water to the boil.
2. Drop the spaghetti into the water and boil for 10-12 minutes.
3. Heat the oil in a medium pan.
4. Add the steak and brown for 5-6 minutes.
5. Tip in the tomatoes and red wine and add the Worcestershire sauce and Tabasco.
6. Crumble in the stock cube and stir well.
7. Leave the bolognese to simmer for 10-12 minutes.
8. Drain the spaghetti and divide between two plates.
9. Spoon the bolognese onto the plates of spaghetti.
10. Garnish with the fresh herbs and serve.

500 grams minced beef
1/2 t oregano
4 cloves garlic
1 1/2 tins tomatoe puree
2 T tomatoe paste
1/2 white wine
1 T sugar
salt and pepper to taste
1 medium sized pottle of cottage cheese

Cook mince, add chopped garlic and oregano.
Add tomatoe paste and puree.
Stir , then simmer 5 mins.
add wine and sugar
salt and pepper to taste
simmer 10 mins stirring occaisionally
Take off heat and let sit for ten mins,
then stir cottage cheese through.

3/4 lb. bulk Italian sausage
2 (15 oz.) cans tomato sauce
1/2 c. water
1/4 c. red wine
1 tsp. sugar
1/2 tsp. Italian seasonings
1 lb. pasta

Saute mushrooms, carrots, garlic, onion, celery and green pepper in oil. Add sausage and brown. Drain fat, add tomato sauce, water, red wine, sugar and Italian seasoning. Serve over hot spaghetti. Serves 6.
