When making hardcandy do you have to use oils ? Is there anything else that I can use?

Yes there is. You can also use extracts found in the spice asile at your grocers but, you'll have to use much more than oil because oils are stronger and more flavorful.

You can take a simple syrup and cook it to hard crack stage and you basically have hard candy! The key is "hard crack stage"!
