My mum told me that supermarkets pump water in to a lot of their meat to make it appear bigger in the packaging.. If you microwave supermarket bacon before you fry it.. loads of water comes out. Maybe restaurants buy better meat which keeps its real size after cooking.

Yes, restaurants use larger cuts because of aesthetic appeal, portion size wants of some customers, plus they can charge higher prices!
