Easy to do!

First of all, realize I am the queen of mashed potatoes. There are so many ways to prepare this dish. With skins, without skins, whipped or mashed or beaten, with sour cream or cream or... get the drift? Taters have to be eaten fresh to be fully appreciated.

When she was 11 my daughters and I were visiting family for the big Christmas day. Lots of kids and high excitement level but very containable. Anyhow my daughter was very funny at times. As the oldest child by 1 1/2 years she carried some serious clout. We were still serving meals while the kids were all sitting at the table waiting for the adults.

My brother said the blessing. Just as we said Ameen my daughter let loose with the HUGE sneeze that she had been holding in for a minute or so. Mashed potatoes everywhere! Out her nose was the worst complete with gravy. I am laughing as I remember this. The children broke out into peals of laughter. She of course was a little embarrassed but could only laugh and hold out her plate and ask for more! Like Oliver! After going to clean up of course.

Peeled, steamed and whipped with egg, butter, s & p, and milk ... whipped to a strainable light .... nummy... Great with gravy or for topping a meat dish like shepards pie or a stew.If there are ever leftovers, indeed rare if they are really good, they are great tossed into a soup made within the next 24 hours or so. Nothing wasted.

It is nice to throw in other veggies with them for a change. Maybe a bit of carrot or squash. Spinach & parmesan and egg whipped in is.. delicious. Corn whipped into them is great.

Alas I am not so good with the gravy so I get someone else to make that. Potatoes are so good for you. That is why I mash the peels into them 90% of the time. Sometimes, baked between nuker and oven, just buttered and mashed with the fork with sour cream and chives is to die for.

no....I like meat better than potatoes, so if I eat too much of anything on my plate it's more likely to be meat.
