Sear your roast, place in your pot w/ your stock or braising liquid, bring to a boil, then cover and reduce to a simmer. Leave covered and simmer (no more than simmer!) for two hours. The timing will vary due to many things. Check with a fork after the first hour, the every half hour after, but leave covered and left alone best you can. It will get tender, be patient! I promise!

my favorite recipe is take a good arm roast ,pour a beer over it and enough water to cover in a good heavy pot simmer on low for about 2 hrs check for tenderness add celery ,3 or more depending on how many are eating and if you like it ,same goes for onion 1 large 3 or 4 potatoes quartered and 4 or so carrots more if you like ,add water if needed cook till all is done about 3 or so hours salt to taste you can thicken broth if you like. then the next day i toss it all in a pot add more veggies ,a can of stewed tomatoes chopped ,frozen soup mix veggies some v 8 juice a little soup base 1 or 2 tsp of it and make a pot of veggie soup yumm
