recently I discovered a recipe that adds cauliflower to mashed potatoes, so you get more healthy vegetables in a way that tastes better. Does anyone know other recipes like this for vegetables that make them easier to take?

Well, for years I tried to get my kids to like carrots and they just would fight eating them until I added them to mashed potatoes.
Another way is to add veggies to your basic quiche recipe. I hated spinach and never knew that my mom had put it in quiche.
Then there is the vegetable lasagna (you can still add meat).
I just shred zucchini and yellow squash, slice some "canned" tomatoes, add canned mushrooms and layer some alfredo sauce, then uncooked lasagna noodles (barilla) then ricotta, mozzarella, both squash, some tomatoes and mushrooms and keep repeating this until you've used all ingredients and filled baking dish. My grandkids love this lasagna and don't even know it is mostly veggie.
Shred vegetables like carrots and zucchini and add them to the tomato sauce in spaghetti.
You could even put shredded veggies in gravy.
I like to save the peel from veggies (any kind). I collect them and put them in a plastic bag in the freezer until I have enough to make about six cups of vegetable broth. Just boil all of them together. Then Instead of adding plain water to a recipe I add the veggie broth. There are plenty of vitamins in there.

Instead of adding them to the mashed. Try this take a head of cauliflower, and take off the leaves and bring about a few inches of water in a deep pan to a boil and add the head in one piece to the water and cook until tender then drain the water and add a little milk or what you would put in your mashed and mash with a potato masher.

mix cauliflower, broccoli, a can of cream of mushroom soup and Velveeta and bake - even little kids will eat this

wrap asparagus with a thin slice of ham that has been spread with Dijon mustard and roast

shred carrots, zucchini and onion and add to your tomato sauce for Italian dishes

experiment with different veggies pureed and added to soups, stew, or chili

use a can of V8 whenever you make a soup or stew or anything with a red based sauce to up the 'veggie' vitamin content

add finely grated cucumbers or radishes to cream cheese spreads or sour cream dips

I have made a recipe of macaroni and cheese with chicken and broccoli.......its really good!!!!! i like broccoli anyway, but im sure even someone who doens't will like it in this recipe. try it!
