Dry it, salt it, let it rest. Dry it again, season with salt and pepper and grill-mark it. I mean, don't leave it on your grill until it's marked, but rather, have your grill hot enough to sear it when you lay it on there. Only grill mark it! Then finish it, to your taste, in a 350f oven. Have your oven pre-heated. Then let rest for a few minutes after you remove it.

We love grilling. Most recipies recommend grilling over a direct-medium fire (350°F to 375°F). Allow the steak to stand at room temperature for 20-30 minutes before grilling and let it rest for 5 minutes after grilling. Season to your taste, but if you like salt, put on just before grilling so that it doesn't draw the moisture out of the meat.

I rub a little extra-virgin olive oil on mine, season it with Kosher salt and ground black pepper, and throw it on a screaming hot grill. The only way I'll cook a steak.

On a grill with charcoal. No seasonings. about 7-9 minutes on each side depending on how thick it is. Medium. with A1 on the side.

Plain and simple...no seasoning...you don't need it if its a decent piece of meat. over med- to- med high heat 8 mins on the first side...6-7 on the other...just try not to flip it a lot and don't press or flaten it will it is cooking. it should be at about MED.......ENJOY
