I work in a Pizzeria and we use a mixture of part skim mozzarella and whole milk mozzarella. The most popular manufacture in the industry is Grande, followed by Polly-O. The reason we mix the two cheeses is because the whole milk mozzarella by itself seems to burn a little bit easier without the skim mixed in. But it will also depend on what pizzeria you are going to. Some old school pizzerias use Buffalo mozzarella or fresh mozzarella that is made on the premises or purchased from a local cheese maker. Being from New York we have the luxury of having these options where other markets are limited to what they can use.

That's commercial pizza cheese. If you want mozzarella go to Totonno's on Neptune Avenue near Stillwell in Brooklyn, NY. Coal fired oven.

It is mozzarella, and your are tasting a difference because alot of italian's use fresh mozzarella on their pizza's

Mr DeMarco (Di Fara's Pizza) uses imported buffalo mozzarella; when the pie comes out of the oven, he dusts it with grated grana padana cheese.

Most places use just plain mozzerella, but a lot of places will also use goat cheese in addition, or will add smoked mozzeralla, but this will be noted. If not, it's just plain mozzeralla. Don't know why it tastes different here, maybe it's the way it's cooked, we use a lot of brick ovens instead of regular ovens in the city. That gives it a different taste.

I think its the sauce you may find to be tasty, many places make their own sauces. NY has the best pizza !
