How long do I fry them for and how do I know they are done?

As long as the chicken fingers are cut in a consistent size, they will get done in about the same length of time.....8-10 minutes. They will usually rise to the surface as they are nearing the end of cooking time. Watch for the outer color to "brown", and more importantly, don't be afraid to check one. Take one out during the mentioned timeframe and cut it open....is there pink or does it looked like it's cooked?

Here's a tip: Make certain your oil is hot enough and don't put too many chicken fingers in at the same ime. THat will lower the temperature of the oil making the cooking times inaccurate.
