Anyone know of any good home fries recipes using baby red potatoes? It's the only potato we have and we're just eating french toast and home fries for dinner tonight.

peel and dice the potatoes. also dice 1 small onion. heat skillet and add lots of butter, onion, and potato. season with salt, pepper, and paprika. fry over medium to medium high heat until cooked through and crispy, about 30 minutes.

slice them verticly like 5 times about a 1/4" appart then cut the slices in half the long way so you have 2 long pieces. cook in a bowl in the microwave for like 6 min to start the cooking process. Then put them on a cookie sheet greased with olive oil. drizzle olive oil over them some garlic salt and pepper, and some lawrey's seasoned salt. Cook for like 15-20 min at 450 degrees. flip half way through cook till they start to brown or are brispy on the outside. Great steak fries. Can also throw chesse on them when they come out if you want. I somtimes do some gorgonzola and parmesean.

6 Medium baby red potatoes (6 oz. each), peeled and sliced into eighths (or more for a bigger party)
1 tblsp. Canola oil
1/4 tsp. Cayenne pepper
1 tsp. Chili powder
1/2 tsp. Cumin
1/2 tsp. Salt
1/4 tsp. Ground black pepper

"Nuke" them until soft them mix them with melted butter, garlic powder, onion powder and some either dehydrated onion or fresh minced onion, and salt and pepper to taste. Place in a greased baking dish and bake at 450 degrees for 20-25min until crispy on the outside. They will be fluffy on the inside and crunchy on the outside....delish!
