Because of the stimulation you get from the air out your mouth and nose, it is immpossible to open your eyes while sneezing, unless you want to to detach your eyes from your head... :)

It's actually a defense mechanism. If we sneezed with our eyes open, our eyes would literally pop out of our head. The sneeze is very powerful, so our body, involuntarily, closes our eyes, to protect them.
