'Two weeks tomorrow' - "Morgen in zwei Wochen."
'Three weeks on Monday' - "Montag in drei Wochen."
'Four weeks yesterday' - "Gestern vor vier Wochen."

ok - a week today is 'heute in einer Woche' or just 'in acht Tagen'
a week tomorrow, or on Tuesday is 'morgen/Dienstag in einer Woche'
i'm assuming you could change the einer for zwei or drei, although i'm not a native speaker. hope that helps :0)
