You probably mean egg fried rice, right? (If not just leave out the egg in the below, lol.)
Cook rice as normal. In a frying pan, heat some oil or butter. If you like, you can sautée some onions in it - I always do, but it's really a matter of taste.
Add the rice. Stir it a lot. If you want, add some shredded carrots or other veggies. Just as the rice begins to brown, push it all over to one side of the pan.
In the empty space, ad a bit more oil. Put one egg (or more, if you're making a lot) in the empty space. Scramble it with a whisk or fork, adding salt. (Basically like scrambled eggs).
when it's about half- done (i.e. starting to get solid, but not really solid yet), quickly mix the egg with the rice. Stir well, and fry for another minute or so. Salt and pepper to taste. (Or add some soy sauce instead of salt, if you have it.)

Fried Rice Recipe:
Serves 4 to 6
Ingredients:
4 cups cold cooked rice
4 tablespoons oil
3 beaten eggs
1 teaspoon salt
Pepper to taste
1 scallion, chopped fine
Directions:
1. Break rice apart with wet hands
2. Heat oil on high flame in wok. Stir-fry rice rapidly, turning spatula constantly until the rice is thoroughly heated.
3. Make a well in center of rice. Pour in beaten eggs. Stir eggs until they are scrambled. Then stir-fry eggs into the rice until thoroughly blended. Add salt and pepper. Stir-fry 30 seconds. Add scallion.
May be prepared in advance. May be frozen. Reheat before serving.

The second recipe - Sun Ya Fried Rice - is a Cantonese dish made with shrimp, roast pork, and chicken. The third is an authentic recipe for Yangzhou or Yangchow fried rice.
Finally, here are a few basic tips for cooking rice:
* Always use long grain rice - short grain rice is used only for desserts and snacks in Chinese cooking.
* Rinse the rice in water to get rid of excess starch.
* Use 1 cup rice to 1 1/2 cups water. For example, when cooking 2 cups of rice you would use 3 cups of water.
* Bring the rice to a boil at medium heat (about 4 on the dial).
* When boiling, turn the heat down to medium low (about 3) and tilt the lid on the pot. This allows the steam to escape.
* Let the water evaporate. When you can see craters (holes) in the rice, put the lid on tight.
* Turn the heat to low, and simmer for another 15 minutes.
* Fluff up the rice, and serve.

General Info:
Lightly fry the rice in a pot with oil(butter), dry fruits, nuts, semi-cooked meat and spices that you were able to taste at the restaurant, then add water and cook per instruction on the package of rice, you need to use about 20% to 25% more water. You must use warm water to add to the fried rice cold water will make rice stop cooking and will take longer to cook and need more water and time to cook.
PS:
Re fried rice, cook rice per package first add,oil and ingredients, little more water and spices, than reduce all the water till you get the consistency you are after. Make sure the spices are cooked well.

Ingredients
1) 1 kg of Basmati Rice
2) Soy Sauce - 300 gms
3) 200 gms Ginger cut into small pieces
4) 300gms Garlic cut into small pieces

Procedure :
Take a frying pan and pour 4 tbspns of oil into it, fry the thinly sliced onion untill its golden brown in colour then put the beaten egg on the fried onions and make onion omletter out of it cut into small pieces.Take a separate pan, pour and heat 2 tbspns of oil then fry the capsicum,carrot and cabbage shredded,french beans and mushrooms,add soya sauce into it with a little bit of salt.Take a nonstick kadhai with 4 tbspns of oil.Add the cooked refrigated rice and fry for about 3 mins then add garam masala,onion egg and fried vegetables.Add 2 tspsn of chilly paste and a liitle bit of water.Simmer for 10-20 seconds and serve hot with sprinkled pepper and corriander leaves on it.

there r so many kinds of fried rice. which one did u taste and loved? well, the easiest is to stir fry some pounded garlic till yellow, add in any chopped vegetables u like, if you r non veg. then can add in some diced chicken first and then the veggies. dont over cook, add some soya sauce and ground pepper. lastly mix in boil rice. stir well n enjou ur fried rice.

1/3 cup peanut oil
4 large free-range eggs, beaten
1 tablespoon peanut oil, extra
11/2 tablespoons finely chopped ginger
4 garlic cloves, diced
1 medium-sized brown onion, finely diced
1/2 cup roughly chopped rindless bacon rashers or Chinese sausage
1 teaspoon white sugar
2 tablespoons Shao Hsing wine
5 cups cooked medium-grain white rice
1 tablespoon oyster sauce
1 cup finely sliced spring onions (scallions)
3 teaspoons Maggi seasoning
1/4 teaspoon sesame oil
2 spring onions (scallions), finely sliced on the diagonal
1/4 cup light soy sauce
1/2 large red chilli, finely sliced on the diagonal
Heat oil in a hot wok until the surface seems to shimmer slightly. Pour beaten eggs into wok and cook for about 1 minute, lightly scrambling them and rotating the wok to ensure even cooking. When almost cooked through, carefully remove omelette from wok with a fish slice and drain on kitchen paper. Set aside.
Wipe out wok with kitchen paper, add extra oil and stir-fry ginger and garlic for 1 minute, or until very aromatic. Add onion and stir-fry for 2 minutes, or until lightly browned and tender. Add bacon and stir-fry for a further minute, or until lightly browned. Stir in sugar and wine, then stir-fry for 30 seconds.
Finally, add rice, reserved omelette, oyster sauce, spring onions, Maggi seasoning and sesame oil. Stir-fry for 3 minutes, or until rice is heated through. Roughly chop omelette into smaller pieces as you stir.
Divide rice between individual bowls and garnish with extra spring onions. Combine soy sauce and chilli in a small bowl and serve on the side.
tip: this will give you fried rice like the restaurant. Make sure you use jasmine or meduim grain rice as it does not hold very much moisture. You definetly need a wok or very high heat.

Make your rice the day ahead, and cool it in the fridge. You must start w/ cold rice or it won't work.
Fried Rice with Ham
Serves 4.
3 large eggs, lightly beaten w/ 2 tsp. waer
2 Tbsp vegetable oil, divided
½ tsp. toasted sesame oil
Coarse salt to taste
4 green onions, thinly sliced diagonally (both white and green parts)
4 garlic cloves, minced
5 oz. ham, thinly sliced and chopped (can use cooked chicken, pork, or shrimp as well)
4 cups cold cooked rice
3 Tbsp. rice vinegar
1 cup frozen peas, thawed
In a large nonstick skillet, heat 1 Tbsp. oil, swirling to coat. Beat eggs, with 2 tsp. water and ½ tsp. coarse salt. Cook in skillet, moving cooked eggs aside gently to allow raw eggs to run in their place, about 2 minutes. Transfer to plate; when cool enough to handle, cut into strips.
In same skillet, heat remaining Tbsp. vegetable oil and sesame oil. Add garlic and scallions, heat and stir until fragrant, about 1 minute. Add ham and rice, season with salt, and cook until very hot, stirring often, about 5 minutes. Add vinegar, peas, and eggs, cook until very hot, about 2 minutes.
