We have a small family (me and two boys - men, really), but we try to make it special by inviting others. This year, there will be 10 people, with three different cultures - Columbian, Austrian, Indo-Canadian. We will have Chorizo Sausage, homemade Chimicurri sauce, smoked pork chops with apples and cinnamon, quartered game hens, with the skin lifted and stuffed with with an indian tandoori-style spice mixture, a small boned lamb leg marinated in lemon, basil, mint, garlic, olive oil and balsamic vinegar, and a variety of veggies. We will begin with snacks like homemade pate, a selection of cheeses, sliced Kielbasa, pickels, olives, etc., and end with a mango coconut custard topped with homemade cinnamon whipped cream and a pinapple upside down cake with pistachio cream.

It is a lot of work, but truly worth it! I find that inviting others increases the merriment, and extends my cooking skills as I try to cook something from each culture.

Have a wonderful Easter!!

This year I will be spending Easter at my in-laws. They don't like ham, so it will be T-Bones on the grill, mashed potatoes and mushroom gravy, sweet potatoes, candied carrots, corn, homemade biscuits, relish tray, veggie tray & dip, fruit tray, pumpkin pies, apple pies, cherry pies. The list goes on and on. My husband has a huge family, and my mother in law goes all out! I can't wait......lol

Usually we go over to my aunts and have some type of steak, mashed potatoes, and deviled eggs. It is a very good meal. Sometimes we will throw in some vegies like green beans or something. We will sometimes have ham too.
