In conversation with friends we got to talking about the foods we used to eat and love as kids. I was just curious as to what other people ate and loved. Share your thoughts and recipes.

Pork chops simmered in tomato soup. They were my mom's go to recipe when she needed something quick, which was all the time.

The vegetables fresh from the garden in the summer.....there were 24 feet between the rows of corn and the kettle ..... and the cucumbers often did not make it into the house because --despite the spines and the garden dirt -- they were the BEST!!! And tomatoes - good heavens, were they good! I once found a friend in the garden in the tomato patch with a saltshaker, enjoying the tomatoes straight from the vine....

I live in a city now ... (sob!!)

I do have one recipe you might like... it is for
Yellow Summer Squash

(use the old variety that is yellow all the way through ... not the new hybrids that have touches of green in the seed area)

Cut some small onions in quarters, lengthwise and do them gently in a little water with a pinch of coriander powder ///

or you may brown them gently in a combination of half butter/half oil, and a touch of coriander powder to toast it gently, Indian style ///

add sliced summer squash, and a little water, cover the pan and cook until squash is fork-tender, season with salt & pepper.... serve with brown rice as a first course!!

Then steak and sliced tomatoes direct from the garden, covered with fresh herbs from the same source ....little red onion or mild white onion ..

.I think you could do baby zucchini or courgettes the same way, but I would not use the coriander .. just some salt and pepper... they are wonderful with brown rice...

We also lived next to an old apple orchard that was no longer used but still produced Baldwin and Northern Spy apples .... my mother always canned applesauce ...

Wow, just the thought of this brought back so many memories.

The first would be real mashed potatoes with real butter that my Mom made in the pressure cooker. That really stands out in my mind because it was one of the few things I could eat after having my tonsils taken out when I was a kid.

The second would be salt cod and boiled potatoes with fat pork (English and Scotch background via Newfoundland) with carrots and/or peas on the side.

The third would be oven roasted beef with potatoes and carrots with Yorkshire pudding.

So much better than any food from any resturant ever. (probably not considered heart-healthy...ha,ha)

Okay, this is bad...now I'm starving, and wish my parents were still alive to share these with my family and I...

You brought back many of my favorite memories. Thank you! I loved our family corn roasts and BBQ's at my grandparents house. My grandmother made the best potato and macaroni salads. Her Swedish meatballs were to die for. My grandfather was the grill master of all time. His steaks would melt in your mouth, and his burgers are in the dictionary under perfection! My mother is not much of a cook, even though she tries harder than anyone I know. However she made taco night a night to remember! As for my father, he always had a garden, and I remember fresh cherry tomatoes, corn, cucumbers, and sweet peppers all summer long.

My mom made a casserole called "Russian Fluff".
It had elbow mac, browned hamburger, and peas in tomato soup or sauce--we LOVED that stuff! We requested it at least once a week, and never got tired of it.

When things were tight, she'd make "open faced burgers". Tou toast bread on one side, then on the OTHER side, spread a thin layer of ground beef. Then pop in the broiler for a few minutes until meat is cooked.
We gobbled these up faster than she could make them, and they have become one of my kids favorite snacks. (even though they're in their 20's)

I am a plain old white Canadian, but my parents tried very hard to instill their love of food in us. Favourite Birthday dish - Garides Mes Salsa (shrimp with tomato-based salsa). Favourite Party snack - homemade pate. Favourite comfort food - Pot Roast. Favourite summer fare - grilled porterhouse steaks.

My mother's "Meatball's", she's gone 20 years :( but, I still have the recipe, and make them every other Sunday, I close my eyes and I'm at my old house again, doors slamming, people screaming "I'm Home", dog barking, my mother yelling "Wipe your feet, wash your hands, and sit down, we're eating" !

Goulash. A hungarian dish, but my mom made it her own special way. It's basically just hamburger, elbow macaroni, and seasoned tomato/speghetti sauce. Still like it today.

this is a hard one to decide- spaghetti and meatballs, shrimp fra diavlo with white rice, new years eve prime rib and lobster bisque made by my mom. made by my dad- ny system wieners, blueberry cheesecake bites, grilled swordfish, homemade chinese wonton soup.
