try sprinkling powdered pepper or putting orange/lemon rinds around the counter (or use spray the counter/stove with citrus juice). Cats don't lke the smell and it should keep him away from the counter and the stove.
Don't forget to reapply after you've cleaned the counter though.

Last year my beautiful Manx cat Theodore went out for the evening and never came back. I love cats and the house didn't feel the same without one, so I picked up Lola from a rescue centre. She was very frightened and would pee all over the house. I found Cat Spraying No More� on the internet and the techniques worked almost immediately. I haven't had a problem with Lola since. Amazing!

Clean up the places where he's urinated with something like Natures Miracle or Simple Solution. Do not use ammonia. Then take the extra step of disinfecting everything.
Put the cat in the bathroom with his litterbox, water, blanket and food. This gives a smaller space for him to be naughty and an easier place to clean up. You may have to keep him in there about 2 weeks for potty box retraining. Then to be on the safe side I'd confine him somewhere every time I'm gone and when I'm asleep. He may howl because that's what Siamese do, so maybe a soft radio would help him. It will be worth it.
A friend of mine had a cat that peed in her toaster! Gross!

We once had a cat which did the same thing, and what eventually solved the problem was to use burner covers. Not only did that keep us from having to disassemble the stove top every time she peed, but for some reason the stove was no longer an attractive place to pee.
Now if we could just figure out how to cure the one which pees in the dog dishes..........

You might need to keep him locked in a room at night, however, he might keep your friend up by howling to get out. Also, try moving the litterbox to another area of the house. Maybe there's something that the cat is scared of at night where the litterbox is. You might also want to put some type of material on the counter, maybe the cat won't pee if there are towels or something else there. Good luck!

ok, i don't want to sound mean or anything. but this really does work well. get some mouse traps and wrap the part that would normally trap the mouse in something so it doesn't hurt them. get alot of them and put them all over the counter before you go to bed. when he jumps up there and touches one of them it will scare him and might wake you up so you can go yell at him or something. another thing i guess you could try to do is get the counter tops really wet before you go to bed. cats don't like to get their feet wet. but i definately thing the mouse trap thing would work.
