Simply because white tastes better if it's chilled and red tastes better if it's not chilled. An open bottle of wine (of any colour) will keep 2-3 days in the fridge but you should let red wine warm up again before you drink it. If it starts to taste a bit sour/vinegary it's gone off.

You put white wine in the fridge to chill to stop it tasting like Yak's no1. Red opened last night with clingfilm should be OK. Technically, for the purist, red wine should be chilled to 12degC.

The Red wine will taste better tonight as it has been allowed to breathe. White wine only tastes nice when chilled!
