You can keep it from crystalizing in the first place,
by never storing it in the Refridgerator, or very cool place. Store it in a warm dry cupboard, and always covered. And if your Honey ever does crystalize, you can place it in the microwave for a short bit and it will be as good as new.

Keep it in the airing cupboard to prevent crystalising with "sugar granules". If it already has, remove the lid and put in hot water until it has reverted back to liquid. So many people reckon that honey is set with added sugar. Nothing could be further from the truth. It just means the honey has been kept in a cold condition. No better or worse for you than the liquid. Bees keep it liquid by being fed a highly glucose syrup and they crawl all over the combs, all through the day and night, creating a warm atmosphere.

I keep my honey up in the cupboard and sealed but it will still crystalize after a period of time. Since honey will never go bad, I just sit the container in a pan of hot water. As the container gets less honey in it, it also gets more air which causes this to happen.

No reason to waste it...this is a natural process for honey.
You want to warm it, not heat it.
Put it on a sunny windowsill, and let nature take it's course.
This is especially important if you buy raw honey...you don't want to end up cooking it.
Also, think of creative ways you can use the hardened honey.
You might make sticky buns and spoon a small amount on the top of each one prior to baking.
Spoon it into a warm beverage (tea or milk) and it will "melt" immediately.
Try eating a small amount...you will see that the flavor is not lost. It will be similar to eating maple sugar candy.
Finally, keep your eyes open for cute little decorative jars and bottles. When you buy the bulk honey, then pour some off into one of the smaller containers and give it to a neighbor as a "I was thinking about you" gift, or take some to church/work with you to share.

Over time honey will "crystallize." You can return it to normal by microwaving it. Be careful microwaving it in a plastic container as this will melt the plastic. You can spoon out what you need, or microwave at 20 second intervals keeping a close eye on it!

I would reccomend heating the honey also, but be sure that your container is not plastic and that it is not sealed. Heating anything in a plastic container may release pthalates and dangerous compounds that may cause cancer.

if it gets hard just put it in the microwave for about 10 SEC or until it gets soft, then it will be just like new
