A friend as an alergy with sulphite

Sulphite is used in the wine industry to kill yeasts that may start a secondary fermentation in the bottle. I don't know of any wines that advertise that they don't use sulphite.

The statement that a wine contains sulphites/sulfites is an indication that various forms of sulphur are in the wine.

The reason for the sulfite warning (which must appear when there is more than 10 parts per million (ppm)) is to warn asthma sufferers -- about 1% of the population -- some of whom may react badly to sulfites.

Sulfites are also present in fruit juices, bread, dried fruits — where the United States legal limit is 2000 ppm —and in many processed foods. The amount in wine is usually between 20-50 ppm.

Sulphur Dioxide has been indispensable in winemaking since antiquity as a disinfectant and preservative, killing bacteria and wild yeasts, and it encourages fermentation and assists color and flavor extraction. Without use of sulfur, wine would at risk of damage from bacteria, wild yeast, and oxidation. A sulfite free wine would be unstable.

Some organic wineries do not add sulphur during the winemaking process -- however sulphurs are still produced during the chemical processes of fermentation, so even even wines that have noadded sulphur may contain low levels.

However -- because of consumer reaction to the message on wine bottles (interestingly people drink sodas that have a long long list of added chemicals without comment) some wineries are attampting to make wine with low enough sulfur content so that they do not need to show the message.

Wineries trying to avoid sulfur haveto find another way to steilize barrels etc, and some are using ozone.

PS -- if you drink bottled mineral water, have a look at the ingredients. You'll likely find sulfites listed there :)

Check at your local health food or organic markets.

I have heard that it contributes to migrains, so I am not surprised.

I believe I have heard of a wine that is either low or without sulfites. It may not truly be a wine.
