Maybe because for ham and eggs to be green is unnatural?

Hey, don't knock'em till you try them.

When you cook your eggs, lightly break the yoke, put in a little grape jelly, and stir it into the yoke. Not only is it green, but tastes great too!

I don't think that he had even tried them before. He obviously didn't like the look of them; I mean GREEN eggs?? Ug. They'd have to chase me down to try them, too!
