There are many nuances to that phrase - particularly the use of the definite article which is an artifact of translation. It is from John 14:6 (ESV translation follows)
Jesus said to him, “I am the way, and the truth, and the life. No one comes to the Father except through me.
Personally, I believe it's possible that he said something like that (in Aramaic) and I'm not sure that a Bodhisattva couldn't make the same claim - but still, I'm not sure what merit the claim has. I mean, you might be the way too, but if I'm not looking for the way, your claim has no value. If I am looking for the way and you are it, I must still go there myself.

John chapter 14 verse 6
Jesus saith unto him,I am the way, the truth,and the life:no man cometh unto the Father, but by me,
your prayers are not heard unless you pray in Jesus name.
you will not get into heaven unless you believe in the son.

I do belive it.
Im not entirly sure exactly where Jesus said it. But its in one of the 1st four books of the New Testament.
Other than that, there are many examples of where the messiah was prophesied in the Old Testament and then in the New Testament, Jesus fulfills those prophesies.

Slightly misquoted 'life' not 'light' though He is light also.
