In the canning books (such as Ball Blue Book of Canning) it gives the desired time limits for each type of food. For example, acidic foods have a certain time, etc. When you do your canning, you refer to the time listing for the specific type of food you are working with and then write the expiration date on the lid or label. (although, I have eaten stuff that was WAY older than those times given--if the seal is intact, the food looks and smells and tastes like it is supposed to, we eat it)

It depends what it is. Som lasts longer than others. I always date the jars, then smell, then if it dont have a bad smell, taste. If it tastes o.k., eat it.
