I have made a bolognaise sauce and it has a bitter tomato after taste, what can i do to sort it?

Add little pinches of sugar until you are happy. You could use honey as well, but honey will give the sauce a flavor that sugar won't.

Add a pinch of nutmeg to the sauce during cooking, this takes away the bitter after taste without turning the sauce sweet.

Being Italian, I'm full of answers from my mamma. This is the cure. part Boil a potato then add it to your sauce. The potato draws away any bad flavours by absorption. When the potato is cooked Remove the potato from the bolognaise . Also, this method works if you add to much chilli /curry powder to a recipe.

Another cure is to add Two tablespoons of natural yogurt to your sauce and this will tame it down.

I've noticed that with lower quality canned tomatoes.
Try a better brand.MUIR GLEN is excellent and pretty readily available in most areas.Stay away from most store brands.And it might just be me but I really don't care for HUNT's brand.Pretty pricey without good quality.
Sugar your best staying away from.Not a good habit to get into to.

adding a teaspoon of sugar helps the sauce from turning bitter, plus it takes away the acidity

Use some tomato ketchup to adjust the taste to your liking about a teaspoonful at a time

oh love your question i always make bitter sauce ,when i do it i always put four pinches off sugar in my sauce then let it simmer down a bit more .

Probably the wine you are using is acidy - always use a good quality wine.Cooking with cheapo wines is a BIG mistake.

I always add sugar when cooking with tomato,trust me it works
