a snow cat is a snowmobile. So basically they tow you up a mountain and then you can ski. Helli skiing is when a helicopter drops you off at the top of a mountain.

Heli skiing is when a helicopter flies you to the top of a mountain, flies away and leaves you there to ski down on (ideally) fresh, untracked snow. You ski to a staging area where the chopper collects you to fly up and do it all again.

With cat skiing, instead of a helicopter a snow cat collects you at the bottom and takes you to the top.

Heli is a buzz, because going up is as exciting as coming down (almost). Cat has the same skiing experience, but not as much fun up.

You get more vertical with heli because getting up is faster.

Snow cat skiing is when a snow cat (you know, the thing that grooms the hill but without the grooming attachments) takes you to a place not served by lifts. Since it can only take a dozen or so people at a time, you're pretty much assured of fresh tracks all day long. Expensive, but can be a much better deal than helicopter skiing.

Basically what the others said. Heli skiing can take you to more remote places inaccessible by any other means.
