Simply. Rainbow trout is too nice to muck about with. Bake it in foil with a couple of lemon slices on top, and serve it with new potatoes and some asparagus.

YOU ARE GOING TO LOVE THIS! I use to do this on the riverbank over a fire right after a day of fishing. But it should work in the oven just as well.

Clean and pat dry. Leaving skin on and fish whole salt and pepper the inside. Chop some green apple and onion and stuff trout. Add a tsp. butter. Seal in tin foil and bake. Serve this I think with roasted red potatoes and asparagus.

I do mine in a fish kettle with fennel, dill, bay leaf chopped onion and some peppercorns and about 1/2pt of fish stock or water,[if you don't have a fish kettle use a large roasting tin, put herbs and onion in the bottom then the fish and cover the tin with foil] needs 10 to 15 Min's, you'll know when its cooked the flesh comes easily from the bone.I normally serve it with a salad and new potato's.

I would grill it under the grill about 6 mins per side unless it's a huge one then give it longer.. seasoned with a sml amount of oil, ground sea salt and fresh ground black pepper place some quarters of lemon inside to make it a little tangy and serve with buttered new potatoes and a mixed peppery lettuce salad with lemon vinagrette.. yum

How does your rainbow trout feel about it?

Are you going to introduce him to a sauna and just knock him on the head when he realises its only going to get hotter?

Or maybe that sunbed in the kitchen that no one comes out complaining from?

Poor fish.

Fresh thyme goes beautifully with rainbow trout. My hubby cooked that for me once and it was one of the tastiest meals i've ever had!!! I think we had it with fresh peas and pototoes. Keep it simple, have some nice dry white wine with it. Yum - can I come to yours for dinner please lol
