Someone in my family is on a diet with only whole wheat flour and no sugar but can have splenda. Any desserts?

Chocolate Bundt Cake
2 Cups Fructose(sugar substitute)
1 3/4 Cups All-Purpose Whole-Wheat Flour
3/4 Cup Organic Cocoa, Unsweetened
1 1/2 Teaspoons Baking Powder
1 1/2 Teaspoons Baking Soda
1 Teaspoon Salt
2 Eggs (Egg Replacer*)
1 Cup Almond Or Rice Milk
1/2 Cup Olive Oil
2 Teaspoons Vanilla Extract(alcohol-free)
1 Cup Boiling Hot Water

Heat Oven To 350 degrees.
Grease and flour a bundt cake pan.
Combine all dry ingredients in a large bowl.
Add eggs(egg replacer), milk, olive oil and vanilla
extract;
Beat on medium speed with electric mixer for 2 minutes.
Stir in boiling water(batter will thin out).
Pour into cake pan.
Bake for 35 to 40 minutes or until wooden pick inserted
into the center comes out clean.
Cool completely and remove from cake pan to cake plate.
If the cake has a little trouble coming out, go around the
edges with a knife.

Yield 1 Bundt Cake

*EnerG Egg Replacer is a culinary egg substitute.
All specialty items can be found at health food stores
and specialty store.


Mini-Fruitcakes--Sugar Free

1 1/2 cups fresh pineapple chunks
1 cup fresh or unthawed frozen cranberries
1 cup dried currants
1/2 cup chopped pecans
1 2/3 cups liquid fruit juice concentrate
1 cup buttermilk
3 large eggs
3 cups whole wheat pastry flour
1 1/2 tsp. baking soda
1/2 tsp. fine sea salt
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. allspice


Directions:
To make fruit juice concentrate, place unthawed
concentrate in saucepan and bring to a boil over
high heat.
Boil rapidly until liquid is reduced
to 1 2/3 cup - about 10 minutes.

Preheat the oven to 350 degrees.
Lightly butter and flour five mini loaf pans
(5 1/2 x 3 1/4 x 2”).
Combine pineapple, cranberries, currants and
pecans. Measure out 3/4 cup of the mixture
and set aside.
Whisk together the fruit juice concentrate,
buttermilk and eggs until combined.
Sift together the flour, baking soda, salt,
cinnamon, ginger and allspice.
Add wet ingredients and whisk until smooth.
Stir in remaining fruit/nut mixture.
Divide batter evenly among pans.
Place remaining nut mixture on top.
Place pans on large baking sheet and bake
for approximately 45-55 minutes.

Ingredients
3 medium pear(s), peeled and sliced
2 tbsp unpacked brown sugar, packed
2 tsp all-purpose flour
2 tsp fresh lemon juice
1/4 tsp ground cinnamon
1/4 cup(s) all-purpose flour
1/4 cup(s) whole wheat flour
1 1/2 tbsp unpacked brown sugar
1/2 tsp baking powder
1 tbsp reduced-calorie margarine
1/2 cup(s) buttermilk
1 tbsp powdered sugar

Instructions
Preheat oven to 350ºF. Coat an 8-inch square baking dish with cooking
spray.
Combine pears, 2 tablespoons of brown sugar, 2 teaspoons of flour,
lemon juice and cinnamon in a large bowl; toss to coat and pour into
prepared baking dish.
In a medium-size bowl, combine the remaining flours, remaining brown
sugar and baking powder; cut in margarine with a pastry blender, or 2
knives, until mixture resembles coarse meal. Add buttermilk and toss
with a fork until flour mixture is moist.
Drop four heaping tablespoons of dough onto pear mixture. Bake until
crust is lightly browned and fruit is bubbly, about 40 to 45 minutes.
Allow to cool slightly, dust with powdered sugar and cut into 6
pieces.

These are a very basic whole wheat muffin...they are so delicous and perfect for your relatives diet...You can add in whatever you want to make them more exciting...I have added in raisins and apples before and it is really good.

2 cups whole wheat flour
1/2 teaspoon salt
3 teaspoons baking powder
2 beaten eggs
1 cup milk
1 1/2 tablespoons Splenda brown sugar blend
2 tablespoons melted butter or margarine

Pre-heat oven to 375f.
Stir together the dry ingredients.
In a separate bowl, stir together the liquid ingredients.
Combine both sets of ingredients, mixing only until the dry ingredients are moist. Bake in greased or papered muffin tins for 20 minutes.


You can top them with this cream cheese frosting that uses splenda instead of regular sugar..very yummy

1 (8 ounce) package reduced-fat cream cheese
1/4 cup butter, softened
1/2 teaspoon vanilla
1 drop imitation maple flavor
1/2 cup no calorie Splenda granular
1/2 cup powdered sugar

Place frosting ingredients in a mixing bowl.
Mix on medium speed until well blended. Ice cake when cake is completely cool.

Bread (www.marthastewart.com) - nice recipe for two whole wheat loaves -- can add to this bread pieces of chopped walnuts .... or some sunflower seeds ... or even sesame and sunflower together ....

Pie crust - add a little white flour to the measure of whole wheat flour ...

Crackers - look up Abernethy Biscuits in
www.glasgowguide.co.uk --click on "Scottish Recipes" in the left hand margin listings, and the second recipe in the list of recipes is for Abernethy biscuits ..... I would type it out for you but there is a nice picture there that might give you courage .......also: the recipe given is for a cookie, but it says that some bright apple thought of putting sugar and caraway seeds in a plain cracker recipe .... so if you omit the sugar and caraway seeds, you have a cracker for savoury dips and things.... so really: the recipe is for two things: a cookie and a cracker ..... and when making it with whole wheat flour add a little white flour to bind it and make it stick together a little better ...

Whole Wheat Rhubarb Pudding Cake

INGREDIENTS:
5 cups sliced rhubarb
1/4 cup sugar
1 1/4 cups all-purpose flour
1 cup granulated sugar
1/2 cup whole wheat flour
1 cup chopped pecans
1 1/4 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup milk
1/4 cup melted butter
1 1/4 cups sugar
1 tablespoon cornstarch
whipped cream or whipped topping, optional

PREPARATION:
In a 3 quart shallow baking dish mix rhubarb and 1/4 cup sugar. Mix the all purpose flour, the 1 cup sugar, the whole wheat flour, pecans, baking powder, cinnamon, nutmeg and 1/4 teaspoon salt Stir in milk and melted margarine. Spread batter evenly over rhubarb sugar mixture. Mix 1 1/4 cups sugar and cornstarch. Add 1-1/4 cups boiling waters; stir till sugar dissolves. Slowly pour over the batter. Bake in 375° oven for about 45 minutes or until a toothpick comes out clean when stuck in center of top crust. If necessary, cover the last 10 minutes to keep it from browning too much. Serve warm with whipped topping, whipped cream, or ice cream. Serves 8 to 10.


Applesauce Carrot Cake

INGREDIENTS:
3/4 cup butter or margarine
1 cup granulated sugar
1 1/2 cups firmly packed dark brown sugar
2 eggs
2 1/4 cups applesauce
3/4 cups shredded raw carrots
3 cups unsifted all-purpose flour
1 1/2 cups unsifted whole wheat flour
1 tablespoon baking soda
1 1/2 teaspoons cinnamon
1 1/2 teaspoons nutmeg
1 1/2 teaspoons allspice
1 1/2 cups coarsely chopped walnuts or pecans
1 1/2 cups raisins

PREPARATION:
In a large mixing bowl, cream butter until light and fluffy. Gradually beat in granulated and brown sugars. Beat in eggs. Measure all-purpose and whole wheat flour into a bowl; add baking soda and spices and stir to blend. Add dry ingredients to creamed mixture alternately with applesauce and carrots. Fold in walnuts and raisins. Spoon batter into to a greased and floured bundt cake pan. Bake in a preheated 350° oven for 1 hour and 20 minutes to 1 hour and 30 minutes. Cool in pan for 5 minutes; tap to loosen and unmold on a wire rack to cool completely. Sprinkle with confectioners sugar or drizzle with a glaze before serving.

You can pancakes and waffles with whole wheat flour. You can probably also make things like banana bread or zucchini bread too.
