Canon seems to be making a big hype out of their Face Detection Technology. I'm considering two of their models, each with its own strengths and weaknesses. One has the Face Detection Technology. Can I do without it? Will it make much difference in my 'people shots'?

Face detection works as adveritised but most people think that you can do just as well without. In fact, most peole turn it OFF, because it adds a split second to the auto-focus time.
Here are several threads on face detection in a Canon user forum (please scroll to the top of each page - these links drop you in the middle of the discussions)

I have an SD900 and I agree with OMG. Just turn it off and forget you have it. It's not such a big deal.
