Cottage pie is really easy and there is no need to slavishly follow a recipe as it is designed to use up left over meat. Cottage pie is made with beef. This should be left over beef from the roast. If you have not got any buy about 250 g of fine minced beef. If you have got some mince it up in a mincer.
Already cooked beef is mixed with stock (or couple of oxos in hot water) and if you like it finely chopped cooked onions or carrots or both. Give the mixture lots of seasoning - some tomato ketchup, some worcester sauce. It should be damp but not runny.
Uncooked mince is browned up as much as possible. If it is greasy spoon off any extra fat. Then mix it up as above. If you have some a drop of red wine will improve either mixture. Veggie versions can be made like this with quorn mince.
Put the mixture in an oven proof dish. Pyrex is good. Put a good couple of inches of smooth mash on the top. Decorate the top with pattern using a fork. Dot little bits of butter on the top. Bake it in a 200 degree C oven/Hot oven for half an hour so that it is all hot and crispy on top.

Chop two onions, one carrot, one stick of celery and one garlic clove. Then sauté in olive oil until softened.
In the meantime brown about 600 grams of mince in a separate pan, add it to the vegetables and mix together with seasoning and a sprinkle of dried thyme.
Now add a tablespoon of flour and stir well to coat everything. Add 500ml beef stock, a couple of tablespoons of tomato puree, a good dash of Worcester sauce and a dash of port.
Simmer for about 30 minutes until the sauce has thickened. Taste and adjust the seasoning if necessary.
Put the mince into a dish and top with the potato mashed with butter. Run a fork along the top so that you get a pattern and bits of potato sticking up - these bits will crisp up nicely.
Bake in the oven at 200 C for about 30 minutes until bubbling and golden.

Cottage pie is Irish, Shepherd’s pie is English. They are quite similar, save for one important distinction: Cottage Pie uses beef. Shepherd’s Pie uses lamb.
Shepherd … lamb. Get it?
This pie is rich and hearty with just enough spice to keep it interesting.
Ingredients
8 tablespoons unsalted butter, divided
1 cup finely diced onion
1 1/2 pounds 81% lean ground beef
coarse salt or house seasoning
freshly ground black pepper
2 teaspoons Worcestershire sauce
1 1/2 tablespoons Heniz ketchup
beef stock, Kitchen Basics recommended unless you have homemade
2 whole eggs, separated
1/2 cup heavy cream
6 tablespoons unsalted butter
1/2 teaspoon garlic powder
8 potatoes, peeled, boiled, and mashed [see Cook’s note]
freshly grated Parmesan cheese, preferably Reggiano
Method
Heat oven to 350°
Heat 2 tablespoons butter in a large skillet over medium high heat. When the foam has subsided, add the chopped onions and sauté until golden. Add the ground beef and cook until no longer pink. Season with salt and pepper and add the Worcestershire sauce and ketchup. Add a few tablespoons of stock and simmer, covered, over low heat for 15 to 20 minutes, adding more stock as necessary to keep the mixture moist.
Beat the egg yolks until light; in another bowl, beat whites until stiff. Beat the yolks, cream, the other 6 tablespoons butter and garlic powder into hot mashed potatoes. Gently fold in beaten egg whites.
Spread meat mixture evenly into a casserole then top with potato mixture. Sprinkle with Parmesan cheese and bake until potato topping is puffed and golden, 25 to 35 minutes.
Cook’s note:
The proper way to boil potatoes is by placing potatoes in a large pot and cover with salted cold water. Bring to a boil and reduce heat so that potatoes continue to simmer. Cook potatoes until tender, 20 to 30 minutes depending on the size of potatoes. The smaller you cut the potatoes the quicker they will cook.
Drain potatoes and return to hot pot and shake to dry off. Carefully peel potatoes and pass through a food mill or ricer.

Just cook your minced beef, add onions carrots or whatever veggies you like, add gravy and spices, boil and mash potatoes. Put beef in a caserole dish, spread potatoes on top and sprinkle on some cheese if you like the bake in oven, that's what I do.

fry up the mince in some water with the onion then add some gravy, boil and mash the potato's add a little milk and butter to make them creamy, slice and boil the carrots, mix the carrot in with the mince, shove it in a baking tray, spread the mash on top evenly then stick it in the oven for about 30 minutes on i high heat, you can put some grated cheese on top aswell if you like,

fry mince beef in pan - when brown take out.
chop up onions, fry in pan till soft.
put beef back in with onions, add about three quarters of a pint of boiling water with 2 oxo cubes dissolved in it.
chop a carrot very finely, add to pan.
put everything in a large saucepan and cook for an hour.
add mashed potatoe on top .
