I know it doesn't improve the design of the cabinets but I am wondering about the material that is being used

Refacing can be a much cheaper alternative than replacing. Choice of materials is yours. You can select doors that are wood or composite materials. Also choose more ornate styles than what you currently have.

All refacing is striping the old finish off and replacing it with a new one, or changing the rails and styles of the face

no. you really hit the big one. refacing doesn't improve the layout of the room. If you have decent cabinets and the layout works for you, why not reface?

If your room is bad with cheap cabinets, replace and improve.
