If I need to change the whole wheat flour, how do I do that?

Yes you can substitute it but for recipes that require a raising agent I would add a little more into the recipe as it can make things just a bit heavy. Why not try substituting half the flour for wholewheat first in a recipe and see if you like the flavour and slight texture change? I make half wholewheat bread and my kids like that better than all whole wheat,but they don't notice my 100% wholewheat pastry! It still increases tha fible and vitamins too.

If you are making bread or rolls you need to have some high gluten white flour ( bread machine flour) or add just plain wheat gluten 3/4 cup to 4 cups of wheat flour). If you don't you will have a very heavy bread that doesn't rise. I haven't used it in recipies like cookies, though I might just try it and see .
